4 eggs 1 tablespoon of cinnamon
2 cups white sugar 2 teaspoons of baking power
1 1/2 cup oil 2 teaspoons of baking soda
1 3/4 cup pumpkin (small can) 1 teaspoon of salt
3 cups of flour 2 cups of raisins (I used golden raisins)
Beat eggs slightly. Add sugar, oil, pumpkin and beat thoroughly.
Add dry ingredients and mix until smooth.
Stir in raisins.
Fill greased muffin cups 2/3 full and sprinkle tops with brown sugar.
Bake 375 degrees for 15-20 minutes.
Moist and so yummy~~

Thank-you so much Miranda. It means lots to me to have you pop in. I suppose these muffins are not what we would call ‘healthy”, with the oil and sugar. They are really yummy though.
